Manzanilla Spritz - Rebujito - is a classic Andalusian summer cocktail, hugely popular at fairs and festivals across southern Spain, especially the Feria de Abril in Seville.

It's essentially ‘ready to drink’ - equal parts dry manzanilla or fino and lemon-lime soda; just serve over plenty of ice with a sprig of fresh mint.

This manzanilla version is the most traditional and arguably the best, as its briny, chamomile-edged character works brilliantly against the sweetness of the mixer.
