Moscatel is a naturally sweet wine, produced in a similar way as Pedro Ximénez.

The planting of Moscatel vines is nowadays less common in the sherry triangle, so grapes can be brought in from the nearby towns of Chipiona and Chiclana de la Frontera. Baron source theirs from Chipiona – the key place for Moscatel vineyards in the sherry region where they generally have more sandy soils (‘arenas’) than in Sanlúcar.

Grapes undergo the traditional process of "sun-drying" until achieving an intense raisin-like quality of the fruit.

After pressing, the musts obtained exhibit an extraordinary concentration of sugars and a certain degree of coloration. This is then subjected to partial alcoholic fermentation, which is halted, if necessary, by the addition of wine alcohol. Its aging process is exclusively oxidative in nature and is around 10+ years.

Tasting notes: Dark mahogany in colour with rich aromas of fig and raisin. Thick and lush on the palate, aromatic, floral and sun kissed with a jolt of acidity ends with perfect balance. Velvety and smooth, great body and structure, long and persistent.
