Campestral Palomino | Cadiz, Spain
Made with 100% Palomino Fino (the grape used for most sherries) which makes an aromatic, fresh white wine with a good structure in the mouth and character from its maturation on the lees.
At an elevation of 50m the 8ha of vineyards are located in the Guadalquiver Valley near the town of Trebujena, in the north of DO Jerez. Close to theAtlantic coast there is the influence of both humid and cold winds. The Albariza soil has good water retention capacity, ideal for the ripening grapes.
The grapes are manually harvested at night in 7kg boxes to avoid crushing. Fermentation is in stainless steel tanks at a constant temperature of 18C, after which the wine rests in contact with the lees for several weeks whilst clarifying. It is bottled unfiltered.
Certified Organic and with minimal sulphites.
