Produced from 40 - 70 year old vines in a 12ha plot of limestone soil, rich in fossils.
The fruit is whole bunch pressed, transferred to stainless steel tanks for a cool fermentation with indigenous yeast. Malolactic conversion is completed with indigenous bacteria and the wine is matured on fine lees in tank for 4months prior to bottling.
