100% Chardonnay grapes come from the estate’s 50 year old vines with others purchased from growers in the Chablis region and labelled as VdF Chardonnay.
The fruit is whole bunch pressed to stainless steel tanks for a 30 day cool fermentation with an indigenous yeast. The lees from Patrice’s Chablis’ are added to this cuvee to give more complexity and body. Once fermentation is complete the wine is racked off the lees and matured in stainless steel tanks for 4 months, without malolactic conversion.
