Tasting Notes: A light sparkle with a coral pink colour and bright luminescence whilst the yeasts are undisturbed. The main aromatic notes are candied/dried red fruits, grapefruit and brioche. The clearer the wine, the stronger the fresh fruity notes; the cloudier the wine, the stronger the bready yeast sensations.
The initial taste is very crisp and crunchy, typical features of Lambrusco di Sorbara wine. With the first clear-poured glass, plenty of tart apple and acidic prink grapefruit on the initial palate, the ending is very dry with a medium length. With latter, cloudier glasses, the yeast gives creaminess and a light softness expressed through stronger savoury notes. (The different combination of yeasts and wine gives the opportunity to enjoy two different glasses of wine poured from the same bottle, depending on the quantity of yeast ending in the glass.)
