Fiano, a varietal native to the hills of Campania in Southern Italy, is well suited to the extreme ends of the Adelaide Hills in Australia. The higher altitude of these vineyards allows for slow, even ripening, retaining natural acidity and vibrant fruit flavours.

Jericho’s grapes are sourced from two vineyards at opposite ends of the Adelaide Hills. Kersbrook in the north provides a cool dry climate, with gentle east facing slopes of shallow loam soils prefect for old vines to produce small bunches, full of flavour intensity and soft tannins. Kuitpo in the extreme south of the Hills provides sunny days and cool nights, ideal for even ripening.

Designed with freshness in mind, this wine has been fermented in stainless steel to maintain the varietal spice and tropical fruit flavours. Five months on fine lees following ferment has built creamy texture to complement the crisp fruit profile.

Tasting Notes: Fine mineral character with dry citrus and some warm spice. Elegant floral aromas vie with a buttery nose and a palate of peach, pear and apricot backed by tropical pineapple, grapefruit and honeydew melon. Nutty and floral lees derived characters underpin the freshness of the palate, without overwhelming the delicacy of the flavour profile. On the long, vibrant finish there is a creamy texture with notes of almond and elderflower.
