Para-Roques Ancestral Rosado | Penedes, Spain
The rescue and re-emergence of old, traditional varieties from the Penedés is shown in this wine - from the first vineyard planted on L'Apical’s estate with the rare, local Summol Negre grape. The ‘Ancestral’ method is the oldest art in producing sparkling wines.
After a short period of skin contact the fermentation of the must starts in an open stainless steel tank and is kept at a constant temperature (13-16ºC); there is a spontaneous fermentation with indigenous yeasts. The wine then bottled with a secondary fermentation.
After about nine months of bottling, there is a manual disgorgement to separate the solid parts of the wine resulting from fermentation (lees and secondary products).
Para-Roques is the most natural of L'Apical’s wines. No type of liquor, clarification or other external products, or any filtration process, has been used in any of its production process.

Tasting Notes: orange/salmon tints and violet reflections; light carbonation. Good aromatic intensity - fresh citrus fruits such as pomegranates, grapefruits or strawberries over a delicate but noticeable floral and anise background. These charterers evolve on the palate; the lees contact lends a citric and fresh acidity. Lively, long aftertaste and dry on the finish.
