100% Chardonnay grapes from 10ha of vines ranging in age from 40 to 70 years, grown on the plateau terroir of Portlandian soil.
The fruit is whole-bunch pressed, transferred to stainless steel tanks for a cool fermentation with indigenous yeast. Malolactic conversion is completed with indigenous bacteria and the wine is matured on fine lees in tank for 4months prior to bottling.
