Surrounded by the Côtes de Provence, the appellation of Coteaux Varois en Provence is a tenth smaller than its big sister.

It has a very particular typicality thanks to its terroir; a series of limestone and clay-limestone folds oriented from east to west alternate with areas of gravel and flint; and its very specific climate. It is perched at an altitude (between 200 and 500 meters) where winters are harsh and summers are scorching, with cooler nights. This alternation of temperature allows the grapes to ripen gently and slowly, allowing them to preserve their aromas as fully as possible.

A blend of Cinsault, Grenache, Syrah and Carignan grapes are mainly harvested by machine very early in the night in order to ensure that the wine has a lovely pale appearance. A short maceration on the skins is performed before pressing. The juices are settled at low temperature. Alcoholic fermentation is temperature-controlled and malolactic fermentation is prevented. Vinification is carried out in temperature-controlled stainless steel vats, in the traditional manner.
