Granit Premium Brut ~ 75cl

Cedric, the owner of Cidreire du Leguer, is what we could call an ‘apple-winemaker’. He applies winemaking techniques – and philosophy “Each cuvée is made by me according my taste” – to his organically grown local varieties of apple. He produces gastronomic ciders – to be slowly enjoy and paired with food, but on the basis that “Ciders go with everything that you want.”

The focus is parcel selections and the right blend of varieties, which for Granit Premium are 20% bitter, 70% bitter-sweet, 10% sharp. See below for more information.

Exceptionally smooth bitterness without any astringency; good length on the palate and complex with a touch of honey. It tastes, well, like apple!

Cidrerie du Leguer

Cidrerie du Leguer is a specialist Breton craft cider maker.

They are a small family farm with just 6ha of apples. The orchards are managed according to the rules of organic agriculture – activity is mainly limited to mowing the grass and pruning branches.

Each orchard is harvested, by hand, three times from October to December – everything is done by themselves. The apples are then left to further ripen for 3 to 4 weeks before grating and shredding and being gently pressed for about 3 hours. There is a long fermentation process, with the 1st fermentation in the cuvée lasting 5 months before bottling in spring, followed by a 2nd fermentation in the bottle (3 months).

All their ciders are brut or extra brut. ​No sulfites are added; the cider is made from pure juice, naturally sparkling with a secondary fermentation in the bottles, only racking and filtering when required.
