Domaine Rothschild Cabernet Sauvignon

A highly aromatic Cabernet Sauvignon with lingering flavours on the palate.

Baron Philippe de Rothschild’s winemakers select grapes from their partner growers in the region around Limoux in particular, which offers a patchwork of micro-terroirs.

In order to make this highly aromatic and expressive wine, the grapes are picked at full maturity. The wines from each parcel are vinified separately; the grapes are macerated before fermentation to extract fresh fruit flavours and malolactic fermentation is then carried out to smooth the wines before final blending.

The wine is matured in vats without exposure to air and bottled at Rothschild’s Saint-Laurent-Médoc winery. Each of these essential steps helps to emphasise the freshness of the fruit and reveal the wine’s aromas and flavours.

Tasting Notes:

The nose opens on expressive, ripe red and black fruit aromas, followed by mild spice notes which bring a touch of freshness. The combination of fruit and spice fills out with airing. The initial flavours are powerful, round and highly expressive fruits, between strawberry and blackberry, with suggestions of redcurrant and blackcurrant. The mid-palate retains this weight, underpinned by a powerful and elegant tannic structure, leading into a long, fresh fruit finish.

Ideal with grilled red meat (rib steak, rib of beef) or beef stew, charcuterie or cheese.
