Serarossa Pinot Grigio
The Pinot Grigio grapes are carefully picked up by hand in mid-September. Each vineyard is picked several times over in order to select each individual bunch of grapes at its optimum ripeness. The grapes are de-stemmed and very gently soil pressed in a pneumatic press.
Prior to fermentation the liquid is chilled to allow a natural separation of sediment and juice, after which selected yeast are added to initiate fermentation. Fermentation takes place off the skins in temperature controlled conditions not exceeding 16-18°C in stainless steel for 15 days. The wine stays on the lees for about 40 days and rests for a while before bottling.
Thirst quenching and delicate, with aromas of pear, lemon and lime. Very floral and fresh, and some mineral notes.
Perfect with creamy pasta sauce, fish dishes and white meats. Also ideal as an aperitif.

Currently, C&C has three production sites with wineries owned and located in the north-east and in the south of Italy: in the Delle Venezie DOC area; in the Veneto terroir of Valdobbiadene, where the renowned Prosecco DOCG is produced; and in the areas between Nola and Tufo in Campania, which offer prestigious and ancient grape varieties.
