Blended to create  a dry wine with a fine balance of fragrance and richness, Quinta del Obispo is one of the best vineyards in the area.

The Chardonnay and Gewürztraminer vines, with an average age of 15 years, are grown on gentle slopes at 780-900m above sea level. All the grapes are harvested by hand and pass quickly from the vineyards to winery. This process, performed daily in harvest season, ensures the freshness of the fruit and provides an ideal start to the winemaking process.

Fermentation of grapes last for 22 days in stainless steel tanks with wild yeasts from the bunches and a further one month on the lees adds complexity.
